In the small fishing village of Getaria, Elkano sets the global standard for grilled fish. Their turbot, cooked whole over charcoal, is reason enough to travel. Hidden in a quiet El Born side street, Estimar is Rafa Zafra’s love letter to the Mediterranean. The daily catch is impeccable, cooked simply and with precision. End with the cheesecake one of the best in Spain.

Cataria, Novo Sancti Petri

Elkano’s southern outpost on the Cádiz coast. Inside a beachside hotel, but don’t let that mislead you this is serious cooking. Fish from local markets, grilled with the same Basque mastery. One of its kind in Andalusia.

Los Marinos José, Fuengirola

A family-run institution near Málaga. They buy the fish themselves, sometimes even catch it. Simple, perfect, and supported by one of the best wine and Champagne lists in Andalusia.

Cañabota, Seville

Cañabota in Seville is a purist’s seafood house. The day’s catch is shown on ice at the entrance and then grilled with exact control. Guests choose a tailored omakase or a shorter menu. The cooking is disciplined and spare, with no meat and almost no vegetables, so product, heat and seasoning carry the meal.
